Indian Fusion Recipes to try at home in Lockdown

Hey Friends, I am back with a new food series with some exciting new Indian fusion recipes. As Indians, we sometimes like having the International dishes with an Indian taste or you can also say Indian Tadka.

I have sorted some amazing food recipes for you to cook at home with all the ingredients easily available in your local market.

And most importantly do try the recipes only if you have the ingredients at home. Do not step out of the house unnecessarily. You can always skip any ingredient in the recipes as per the availability at your homes. Stay Home Stay Safe.

Moreover, wash the vegetables thoroughly before use. Please wash your hands with soap before cooking.

All the recipes serve 4 persons

1. Mexican Rice with Bean Sauce

Mexican Rice

Although this is a Mexican dish, I have tried to put in some Indian flavors with Mexican ingredients. This is one of the Indian Fusion recipes which is very easy and also can be made with easily available ingredients at home.

Ingredients

For the Rice

  • 1 cup Basmati Rice (even the normal rice will do)
  • 1 Small Onion
  • 1 Small Red Capsicum
  • 1 Small Yellow Capsicum
  • 1 Small Green Capsicum
  • ½ Cup Boiled Sweet Corn Kernels
  • ½ Cup Tomato Puree
  • 1 tbsp Tomato Ketchup
  • 2 tsp Cumin-Coriander powder(Dhania-Jeera)
  • 1 tsp red-chili powder
  • 1 tsp Mixed Italian herbs or Oregano
  • ½ cup boiled red kidney beans
  • Nacho Chips (Optional)
  • 1 tbsp chopped coriander(kothmir)
  • 2 tbsp oil
  • Salt to taste

For the Bean Sauce

  • 1 cup Kidney Beans (I prefer using Punjabi Rajma for all my recipes. They are medium-sized beans with a pinkish shade)
  • 2 tsp red chili powder
  • 2 tsp cumin-coriander powder (dhania jeera powder)
  • 2 Medium-sized Onions
  • 2 Medium-sized Tomatoes
  • 1 tsp garlic paste
  • 1 tsp green chili paste
  • ½ tsp baking soda
  • 2 tbsp Oil
  • Salt to taste

Method

For the Rice

  •  Soak the Rice approximately for 30 mins.
  •  Then boil water in a large vessel and put the rice in it with a little salt and 1 tsp oil.
  •  Most importantly, do not over boil the rice and then strain the water from rice. Let it cool for 30 mins.
  • Heat oil in a pan for 2-3 seconds and put onions, capsicum, tomato puree, onions, and cook it for a while till the vegetables are cooked.
  • Then add the boiled corn kernels and kidney beans (rajma)
  • Now add red chili powder, cumin-coriander powder, oregano, tomato ketchup and stir it.
  • Let it cook for a few seconds.
  • Add the rice and stir them well
  • Garnish the rice with some chopped coriander.

For the Bean Sauce

· Soak the red kidney beans(rajma) overnight

· Add baking soda in kidney beans (Rajma) and boil it in a pressure cooker for 9-10 whistles.

· Heat the oil in a pan for 2 -3 seconds and add onions, crushed garlic, and saute. You can also add some green chili paste for some extra spice which is completely optional.

· Add the tomato puree of the 2 tomatoes after the onions turn translucent.

· Now add salt and cook the onions and tomato puree completely. It is completely cooked once the oil separates the puree.

· Add the red chili powder, cumin-coriander powder, turmeric powder, and mix it well.

· Then add kidney beans(rajma) in the pan and stir it well.

· Now mash the kidney beans(rajma) with a ladle or a masher which we use to mash potatoes. Don’t crush the kidney beans(rajma) completely. It should be partly crushed.

· The bean Sauce is ready to serve.

For Serving

Serve the Mexican rice on a plate topped with bean sauce and nacho chips on it which is again completely optional.

2. Veg. Momos

This is one of the popular Indian Fusion Recipes. It is a very simple recipe. Momos can be steamed and fried. I will be sharing the recipe for both steam and fried momos.

Ingredients

  • 1 Small-Size Cabbage
  • 1 Medium-Sized Carrot
  • Ginger-chili Paste
  • 1 tsp Pepper
  • 1 cup maida (all purpose flour)
  • 2 tsp oil
  • salt
  • oil for frying

Method

  • Firstly, grate both the vegetables carrot and cabbage, and then add ginger-chili paste, salt and pepper in it.
  • Secondly, You need to put the grated vegetables in a muslin cloth and strain the water from the vegetables only if your veggies are extremely juicy. In our place the veggies are not that juicy, so this step was not required.
  • Now, take the all-purpose flour, oil and salt to knead a dough.
  • Roll the dough in the shape of a small puri and put the vegetable stuffing in the center of the puri.
  • Roll the momos and then fry them
  • Moreover, you can also steam them in a pressure cooker for 10 mins for steamed memos. Most importantly, do not steam it for more than 7-10 mins.
  • Serve hot momos with tomato ketchup.

 Veg Burger

Veg Burger which is again an Indian version of the American dish and very popular in India. We have a lot of Indian fusion varieties in Burger like Paneer Burger, Aloo Tikki Burger, Mexican Burger. Today, I will be sharing the recipe of my favorite Veg. Burger.

Ingredients

For the Patty

  • 4 Medium-sized Potatoes
  • ½ cup green peas
  • ½ cup sweet corn kernels
  • ½ cup finely chopped green beans
  • ½ cup finely chopped carrots
  • coriander finely chopped for garnishing
  • 1 tsp green chili paste
  • 1 tsp garam masala powder
  • 1 tsp chat masala
  • 2 tbsp cornflour
  • 1 cup bread crumbs(put bread pieces in a mixer and mix it for the bread crumbs)
  • salt to taste
  • 4 tbsp. oil

For the topping

· 1 cup shredded cabbage

· 1 Medium-sized onion

· 1 Medium-sized capsicum

· Salt to taste

· 1 tsp Pepper powder

· 2 tbsp Mayonnaise (I will share a quick recipe of home-made mayo just in case if you don’t have it at home)

· 1 tbsp oil

For the Patty

· Boil the potatoes and the green peas, green beans, carrot, sweet corn kernels in a pressure cooker for 7-8 whistles.

· Now mash the potatoes completely and then add all the veggies with green chili paste, garam masala powder, chaat masala, corn flour, bread crumbs, chopped coriander, salt.

· Mix everything well with your hands.

· Now shape the patty in the size of a burger bun.

· Now shallow fry the patty in a pan with some oil.

· Finally conclude it by frying the patty on both sides on a medium flame till the patty is golden brown.

For the Topping

· Firstly, Heat the oil in a pan for 2-3 seconds and then add cabbage, capsicum, and onion in it.

· Don’t cook the vegetables completely. It should be a bit crunchy.

· Add salt, pepper, and mayonnaise 

· Mix it well.

Home-made low-calorie mayonnaise

· Firstly, take 1 cup curd(yogurt) in a thin muslin cloth and then tightly press the cloth to remove the excess water from the curd.

· Secondly, hang the cloth on a long rod or a kitchen sink tap for 4-5 hours, so that all the water is strained completely.

· Finally, remove the hung curd and then add a pinch of salt in it.

· Low-calorie mayonnaise is ready.

For Serving

· Cut the Burger buns in half and toast it with butter on a non-stick pan on both sides.

· To conclude, toast the Buns till they are a bit golden brown and crunchy.

Then, Place the patty on the bottom of the burger bun, then top it with some topping and a slice of cheese. Now place the other half of the Burger bun on the top.

· Serve the Burgers with tomato ketchup some potato chips which is completely optional. Your veg Burger from the Indian fusion recipes is ready to serve.

4. Pink Pasta 

Pink Pasta topped with cheese. One of the popular dishes in India. An Indian Fusion recipe for pink pasta

This is again one of the Indian Fusion Recipes for the Italian Pasta. Majority of us in India like our pasta to be a bit saucy and also not so sour, Pink Pasta is a perfect recipe to suit an Indian taste.

Ingredients

· Any type of Pasta will do. I had used Penne Pasta.

· 3 Medium-sized Tomatoes

· 1 Medium-sized Onion

· 4-5 cloves of crushed garlic

· 1 small Carrot

· 1 tsp sugar

· ½ cup fresh cream

· Mixed Italian Herbs(you can use Oregano and basil, also fresh basil leaves(Tulsi Patta) will do as a substitute if the mixed herbs are not available.

· 1 tsp red-chili powder

· 1 tbsp oil

· salt to taste

Method

· Cook the pasta in a pan full of water for 5-10 minutes

· The Pasta should not be over-cooked. 

· Peel and roughly chop the carrot and onion.

· Firstly, Boil the tomatoes and carrots in a pan full of water for 15 minutes or till they are completely cooked.

· Secondly, after that take out the tomatoes and carrot on a plate and let it cool down. Then remove the skin of the tomato.

· Then roughly chop the tomatoes and carrot and mix it in the mixer grinder.

· Strain the tomato and carrot puree in a strainer so that all the tomato seeds are removed.

· Now put oil in a pan and heat it for 2-3 seconds.

· Then add onions and garlic in the Pan.

· Let the onions cook for a while till they are translucent.

· Now add the tomato and carrot puree in it and stir it.

· Add the Italian herbs, tomato ketchup, sugar, salt and stir well.

· Cook the puree till the tomatoes appear to be cooked.

· Now add the Pasta in the pan and mix it well.

· Add the cream in the pan and again mix it well.

· Serve Hot Pink Pasta with Garlic Bread.

5. Garlic Bread

This is again one of the simplest Indian fusion recipes with fewer ingredients. You can prepare the Garlic Bread in just 5-10 minutes. You can use your regular store-bought bread for this recipe

Ingredients

· 4 Bread slices

· 2 tbsp Butter

· 4-5 cloves of crushed garlic

       Method

· Mix the butter and crushed garlic in a bowl.

· Spread the mixture on the Bread slices.

· Now add some butter on a Non-stick Pan and heat it for 2-3 seconds.

· Cook the bread slices on both sides till they are slightly brown.

· The garlic bread is ready to serve.

· Moreover, you can also add some oregano or mixed Italian herbs in butter.(Optional)
