Street Food Recipes in Lockdown

Hey Freinds, back with another series of food tour from my kitchen. We are still under lockdown and craving for some delicious street food. But, there is nothing to worry about. I have listed down some Indian street food recipes to make at home for your cravings in Lockdown. I am sure you are going to love this series of food tour as the recipes are super delicious. 

The recipes mentioned below serves 4 persons.

Please make the recipes with ingredients available at home. Do not step out of the house unnecessarily. You can always replace or skip an ingredient. STAY HOME STAY SAFE.

Please wash all the vegetables thoroughly before use and wash your hands before cooking.

1.    Tawa Pulav

      Popular street food in Mumbai, this is normally served at a Pav Bhaji stall. The Pulav just tastes so amazing. You can try this recipe to get the same taste as you get on the street-food stalls. This is one of the easy to make street-food recipes in Lockdown with all easily available ingredients.

Ingredients:

· 1 Medium-Sized Onion

· 1 Medium-Sized Tomato

· 1 Medium-sized Potato

· 1 Medium-sized Capsicum

· ½ cup green peas

· ½ cup chopped green beans

· 1 medium-sized carrot

· 4-5 cloves of Garlic

· ½ tsp.green chilli paste

· 1 tsp. chaat masala

· ½ tsp garam masala

· 1 tsp Pav Bhaji Masala

· 2 tsp red chilli powder

· 2 tsp coriander-cumin powder(dhania-jeera powder)

· ½ tsp turmeric powder

· chopped coriander for garnishing

· 1 cup of rice

· 2- 3 tbsp oil

· ½ tsp jeera

· ½ tsp. Baking Soda

· Salt as per taste

Method

· Soak the rice for 30 mins. Then heat water in a big size vessel and add rice in it when the water comes to a boil. Add 1 tsp oil and a pinch of salt in it.

· Don’t over boil the rice. Remove the access water from the rice then and let it cool for another 30 mins.

· Chop the vegetables in a medium size. 

· Then heat oil in a pan and add jeera in it, then add onions, green chilli paste, and crushed garlic in it. Saute the onions for some time and then add all the other vegetables and cook them.

· Add Baking soda and salt and let it cook for a while.

· Once the vegetables are cooked, add garam masala, pav bhaji masala, chaat masala, red chilli powder, cumin-coriander powder, turmeric powder, and a dash of water and stir it well so that the vegetables blend with all the spices.

· Then after 2 mins, add the rice in it and stir the rice with all the vegetables.

· Let the rice cook for another few minutes and then garnish the Pulav with chopped coriander.

· Serve Hot Tawa Pulav with curd or a mix of onions and Tomatoes with some chaat masala in it.

The delicious street style Tawa Pulav is ready to be served.

Cheese Grill Sandwich:

Veg Cheese Grilled Sandwich

This is another mouth-watering popular street snack available in the Mumbai city of India and many other parts of the country. This is a grilled 3 layer sandwich. I have given a small twist to the sandwich. You can check it out below in the recipe. This again is one of the easy to make street food recipes in Lockdown.

Ingredients for cheese grilled sandwich

Ingredients:

· 2 Medium sized Tomatoes sliced

· ½ small Cabbage chopped long or shredded

· 2 Boiled Potatoes sliced

· 1 Medium-sized capsicum chopped long or shredded

· 2-3 tsp. chaat Masala

· 1 cup Green Chutney

· Butter

· 3 cubes Cheese

Method

· Sprinkle chaat Masala on all the vegetables

· Spread chutney on the bread slices. You will need 3 slices of bread to make a sandwich. Spread chutney on one side of each slice and as it is a one layer sandwich one of the slice will have chutney on both sides.

· On the first layer, place sliced potato and tomato on the bread and then place the cabbage and capsicum on the second layer.

· You can grill the sandwich on a pan by drizzling some butter on the outer layer of the slices and gently cook both the sides of the sandwich. It is easier to cook in a grill sandwich machine.

· After the sandwich is cooked spread a generous amount of shredded cheese on it.

· Serve the Sandwich with some potato chips, green chutney, and Tomato Ketchup.

The twist in the Sandwich is I have added cabbage instead of onions and it tastes delicious with the cabbage.

Chole Samosa chaat

This one is my favorite dish these days. I just happened to try the recipe and it turned out to be perfect. The Samosas tasted delicious just as we get on the street food stalls. Though this is a popular snack all over India it is a North Indian specialty. You get Samosa chaat a lot on the streets of Delhi in India. As all the ingredients are easily available at home, this is one of theeasy to make street food recipes at home in Lockdown.

 Ingredients

For Samosa

Ingredients for Ssmosa stuffing

· 4-5 Medium Sized Potatoes

· 1 cup green peas

· 1 tsp chaat Masala

· ½ tsp garam masala

· 1 tsp green-chilli paste

· ¼ cup chopped Mint Leaves(pudina)(main ingredient)

· ½ tsp black salt powder (sanchal powder)

· Salt as per taste

· Coriander leaves

· 3 cups maida(all-purpose flour)

· 4-5 tsp oil

· Oil for deep Frying

For Chole

· 1 cup Chole(Kabuli Chana)

· 1 Medium-Sized Onion

· 2 Medium-Sized Tomato

· 4-5 cloves garlic

· 1 tsp green chilli paste

· 2 tsp red chilli powder

· 2 tsp cumin-coriander powder(dhania-jeera powder)

· ½ tsp turmeric powder

· 1 tsp. chaat Masala

· ½ tsp garam Masala

· ½ tsp baking soda

· Salt as per taste

Method

For Samosa-Stuffing

· Boil the Potatoes and green peas in a pressure cooker. 

· Smash the potatoes in a flat plate, then add garam masala, chaat masala, salt, black salt, green chilli paste, mint leaves and green peas, chopped coriander and mix it well.

· Keep the mixture aside.

· Then mix Maida, 1 tsp salt and oil and knead flour with medium thickness to make Rotis out of it

· Roll Rotis and cut it into half. Then give a triangle shape to the roti and fill the stuffing in it.

· Then cover the samosa by closing the triangle bottom of the Samosa.

· Then deep fry the Samosa.

For Chole

· Soak chole (kabuli chana) overnight or 8-10 hours.

· Boil the Chole mixed with baking soda in a pressure cooker for 7-8 whistles and keep it aside.

· Heat oil in a pan and then add onions, crushed garlic, green chilli paste and sauté for a while.

· Wait till the onions turn translucent and then add tomatoes and a dash of water.

· Once the onions and tomatoes are completely cooked, add turmeric powder, red-chilli powder, cumin-coriander powder, chaat masala, garam masala powder, salt and mix it well with a dash of water.

· Let it cook for a few mins (2-3 mins) and then add Chole and mix it well.

· Then add chopped coriander for garnishing.

· Let it again cook for 2-3 minutes and it is ready to serve.

For the Chaat

· Put some chole on Samosa.

· Then drizzle some curd, date chutney, green chutney, sev on it.

· The Samosa Chaat is now ready to serve.

Pani-Puri

Pani Puri. Street food recipe to make in Lockdown

Pani Puri is a favorite dish of the whole of India available in the streets of the entire country. Pani Puri has different names in different parts of the country. It is known as Pani Puri in Mumbai city, Golgappa in north India and Puchka in Kolkatta city.

 Ingredients

Sprouts(Mung) for Pani Puri and Boiled Potato

· Boiled Potato

· Sprouts

· Pani-Puri Pani

· Date chutney

· Puri

For Pani

· 1 cup Mint Leaves  

· Black salt 

· Pepper powder

· 1 cup coriander leaves

· ¼ cup jaggery

· 3-4 green chillies

· Jeera

· 1 tsp chaat masala

· 3 cups of water

· Salt as per taste

· Boondi(optional)

 For Sprouts Mixture

· 1 tbsp Mung Beans

· 1 tbsp Math Beans

· 1 tbsp Red chana

· ½ tsp chaat masala

· ½ tsp garam masala

· ½ tsp red chilli powder

· 2 boiled potatoes

· salt as per taste

Method

For Pani

· Mix all the ingredients coriander, mint leaves, jaggery, green chillies, black salt, salt, chaat masala, pepper powder in a mixer-grinder with a dash of water. Then strain the chutney mixture in a strainer.

· Then mix 3cups of water and stir it well with some boondi for garnishing

· Refrigerate the Pani.

For the sprout mixture

· Soak all the sprouts overnight or for 8 – 10 hours.

· Mix it with a pinch of baking soda and boil them with the potatoes in a pressure cooker for 4-5 whistles

· Smash the boiled Potatoes and add the garam masala, chaat masala, red chilli powder, salt.

· Then add all the sprouts and mix them well.

For Pani Puri

· Now take Pani and date chutney in a bowl

· Take the Puri, add sprout mixture in it, then dip it in the date chutney and pani and relish it.

Dahi Puri

Dahi Puri again is a popular chaat served in India. It is a favorite of the entire country available at a street food stall. It is also well known as Dahi Batata Puri. This is again one of the easy street food recipes to make at home in lockdown.

Ingredients 

· Puri

· Dahi (Yogurt)

· 1 Medium-sized Boiled Potato

· Sprouts

· Date Chutney

· Red chilli powder

· Cumin Powder

· Sev for Garnishing (optional)

Sprout Mixture will be the same as mentioned in the Pani Puri recipe

Method

Dahi Puri Preparation

· Place the Puris in a plate

· Then add the sprout mixture in it.

· Then drizzle some date chutney and curd on it.

· Then sprinkle some red-chilli powder and cumin powder on it.

· Then garnish some sev and sprouts on it.

· Dahi Puri is ready to serve and relish.

Bhel Puri

Bhel Puri and Sev Puri

Bhel Puri is popular and well known street food in Mumbai. This is popular street food available in every street in Mumbai. But, Juhu Chowpatty in Mumbai (Juhu Beach) serves the most amazing Bhel Puri in Mumbai. The snack is also popular in various other parts of the country like Pune. Pune also has a special version of it known as farsan Bhel which is equally delicious. As all the ingredients are easily available, this is one of the quick street food recipes to make at home in lockdown.

Ingredients

Bhel Puri and Sev Puri Ingredients

· 1 Medium-sized Potato

· 1 Medium-sized Onion

· 1 Medium-sized Tomato

· Date Chutney

· Dalia Chutney

· 4 cups Kurmura (Puffed Rice)

· ½ tsp turmeric powder

· 2-3 tsp oil

· Salt

· Sev

· Papdi 

· Chaat Masala

For Dalia Chutney(Special Bhel Chutney)

· 1 cup dalia

· ¼ cup coriander leaves

· 6-7 green chillies

· salt to taste

Method

For Dalia Chutney

· Mix the dalia, coriander leaves, green-chillies and salt in a mixer-grinder with a dash of water in a mixer grinder. Remove it in a cup and keep it aside.

For Bhel-Puri

· Chop the Potato, Onion, and tomato and keep it aside.

· Heat oil in a Pan and then add the kurmura in it and mix it.

· Then add oil and salt in it and mix it again

· Keep stirring the kurmura on a slow flame till they are properly roasted. The kurmura should be crispy. 

· You have to keep stirring the kurmura as it will burn if it is left to heat in the pan even for a while.

· Then take a vessel(deep bowl) and add some tomatoes, onions, potatoes with kurmura, date chutney, dalia chutney, sprinkle chaat masala, some crushed papdis. Mix everything well

· Then serve the Bhel Puri in a plate with some sev garnished on it.

Sev Puri

Sev Puri is another popular street snack in Mumbai. It is normally eaten along with Bhel Puri. It is also well known as Papdi chaat in North India.

Ingredients

· Sev

· Puri

· 1 Medium-sized Boiled Potato

· 1 Medium-sized Tomato

· 1 Medium-sized Onion

· Chaat Masala

· Sev for garnishing

· Date Chutney

· Dalia Chutney

Method

· The Dalia chutney recipe will be the same as given in the Bhel Puri recipe.

· Place the Puris on a plate, then add some potatoes, tomatoes, and onions on the puri. 

· Then add all the chutneys on it and garnish it with sev.

· Sprinkle some chaat masala on it.

· Sev Puri is ready to relish.

Date Chutney

Date Chutney (Mitha Chutney)

I have mentioned the date chutney in many of the recipes above. This is an important ingredient in most of the street food recipes. You can prepare the date chutney and green chutney in good quantity and store it in the freezer for 15- 20 days. 

Ingredients

· 2 cups date

· ¾ cup jaggery

· 1 tsp red-chilli powder

· 1 tsp cumin-coriander powder

· ½ lemon

· salt to taste

Method

· Remove all the seeds from the dates.

· Add the dates, jaggery, salt, red-chilli powder, cumin-coriander powder 

· Then put the mixture in a pressure cooker and boil it for 5-6 whistles.

· Then remove it from the cooker and let it cool down.

· Then mix the mixture in a mixer-grinder and remove it in a bowl.

· Then add some lime juice.

· The date chutney is ready
