Craving for some Pakoras and Chai!! Well, I guessed it right. Monsoon is on its peak in India. Hot Pakoras and chai is the perfect combination to set the mood with the cool breeze and rains. Pakoras(fritters) are known as bhajji or bhajiya in different regions of India. It is a fried snack made with a base of Besan flour(gram flour) mixed with different spices combined with veggies. I will be sharing two different types of Pakora recipes and street style Batata Vada you can easily try at home.

Bread Pakora Recipe
This is a popular snack in North India. It is a simple recipe made with spiced and mashed potatoes, bread, and green chutney. It is one of the different types of Pakora recipes which is quick and easy to prepare.
I have shared two ways of making the Pakora, by deep-frying it and by cooking it on a pan with 2-3 tsp of oil which is a healthier version.
Ingredients
For the Bread Preparation
- 4 large boiled and mashed potatoes
- 1 tsp green chili-ginger paste
- 2 tsp red chili powder
- 1 tsp chat masala
- 1 tsp jeera
- 1/4th cup chopped coriander
- Salt as per taste
- 1 cup coriander-mint chutney
- 8 Bread Slices
- Oil for deep frying
For the Besan(Gram Flour) Batter
1 cup Besan(gram flour)
2 tsp red chili powder
2 tsp cumin-coriander powder
½ tsp turmeric powder
Water as required for a thick consistency batter
Salt as per taste
Method
For the Bread Preparation
- Put the potatoes in a bowl, and add red chili powder, jeera, green chili and ginger paste, chat masala, salt and coriander in it.
- Mix all the ingredients well with your hands.
- Now, spread some green chutney on one side of two slices of bread and spread the above potato mixture on it.
For the Besan(Gram Flour) Batter
- Put Besan(gram flour) in a bowl and add red chili powder, coriander-cumin powder, turmeric powder and salt in it
- Now add water to make a thick consistency batter and mix all the ingredients.
For the Deep-Fry Bread Pakoras
- Cut the bread in half just like a sandwich.
- Dip the bread slice in the Besan Batter and deep fry it in the oil.
- Serve the Hot bread Pakoras with some Tomato Ketchup or mint and tamarind-dates chutney(meetha chutney)
For the Tava Bread Pakoras
Tava Bread Pakoras is a healthier version among the different types of Pakora recipes.
- Cut the bread in half just like a sandwich.
- Dip the bread slice in the Besan Batter.
- Now, heat a non-stick pan and add 2 tsp oil in it.
- Put the bread pakora on the pan and cook it from all the sides. It should be slightly brown in color.
- The Tava Bread Pakoras are ready to serve.
Onion Pakoras (Pyaz ke Pakore)
Onion Pakoras are popular in the whole of India. They have their own different names for each region. In North India, it is popularly known as Pyaz Ke Pakore. They are popularly known as Pyazi in West Bengal. They are known as Kanda Bhajji in the state of Maharashtra. It is one of the simple and easy pakora recipes among the different types of Pakoras.
Ingredients
- 3 Medium thinly-sliced onions
- 1 tsp green chili and ginger paste
- 1 tsp red chili powder
- 2 tsp cumin-coriander powder
- ½ tsp turmeric powder
- 1/4th cup coriander (kothmir)
- 1 tsp Ajwain
- 3 tbsp gram flour
- 2 tbsp rice flour(optional)
- Salt as per taste
Method
- Put the onions in a broad vessel and add the red chili powder, cumin-coriander powder, turmeric powder, salt, green chili and ginger paste, coriander, roughly crushed ajwain with hands, besan and rice flour in it.
- Now mix all the ingredients well and sprinkle very little water in the mixture.
- The mixture should be moist with water to bind the onions well.
- Now take small portions of onions together and roll them a bit. Deep fry them in oil.
- Serve the Hot Pakoras with green chutney.
Street Style Batata Vada Recipe
Batata Vada is a popular snack in the state of Maharashtra. It is a popular recipe that is almost made in every house in Maharashtra. I will be sharing some secrets with you for making the Perfect Batata Vadas just like you get streets of Maharashtra, especially in Mumbai.
Ingredients
For the Potato mixture
- 5 Medium-sized Boiled and Mashed Potatoes
- 1 tbsp crushed garlic
- 1 tsp green chili and ginger paste
- ½ tsp turmeric powder
- 2 tbsp. chopped coriander
- salt as per taste
- 8-10 curry leaves
- 3 tsp rai-jeera (mustard seeds and cumin)
- 2 tbsp oil
- Oil for deep frying
For the Besan(Gram Flour) Batter
The Besan(Gram Flour) Batter is the same as mentioned in the Bread Pakora Recipe.
Method
For the Potato Mixture
- Mash the hot potatoes immediately after boiling the potatoes in the pressure cooker.
- The hot potatoes mash quickly and give a smooth texture.
- Heat oil in a pan for 4-5 seconds, add rai-jeera and curry leaves in it.
- After it crackles, add crushed garlic and green chili-ginger paste.
- Add turmeric powder and stir them for a few more seconds.
- Now add the mashed potatoes in the pan and mix them well in the oil.
- Add salt in the potatoes and again stir it well.
- Cook the potatoes in a low flame for a minute. The potato mixture is ready for the vadas.
- Add the coriander and stir it with the potato mixture.
For the Batata Vada
· Make medium-sized balls of the potato mixture.
· Dip them in the Besan Batter and deep fry in oil.
· Serve hot Batata Vadas with some mint-coriander green chutney.
